This Spartanburg, S.C.-based chain has been beating odds with what CEO Ricky Richardson says is an "approachable" entry into the red-hot breakfast-and-lunch category. Eggs Up generated more than $49 million in sales last year from 53 locations. Its three-year sales have averaged nearly 30%, coming from a combination of unit and same-store sales growth. And it is now expanding further westward, with a new 30-unit franchise deal in Texas.
