Poke Bros.' founders discovered the traditional Hawaiian dish on a trip to California in 2016 and thought the raw, marinated fish would do well in their home of Columbus, Ohio. They developed a line-service concept akin to Chipotle, but for poke, and invited customers to make their own "sushi in a bowl." It has spread from the Midwest to the Southeast and East Coast, and stood at 47 locations as of last year.
